½ onion finely chopped
3 medium carrots chopped into small pieces
¼ medium swede chopped like the carrot
2 tablespoons peas
2 tablespoons sweet corn
1 Stock cube, sprinkle of mixed herbs, salt & pepper,
1 tablespoon corn flour & some gravy browning or some gravy granules
instead
You can substitute some of the vegetables with others you have in the
cupboard or those you prefer including mushrooms, leeks, peppers, sweet
potatoes
1 marrow
Method
Fry off the mince in its own fat, after 10 minutes you
can drain of excess fat if you wish to.
Add all the other ingredients except for the peas and sweet corn
Add sufficient water to have a good gravy, careful it doesn't dry out.
Bring to the boil and simmer gently for 20 - 30 minutes, then add peas
and sweet corn and cook for a further five minutes.
If you wish to make stuffed marrow use the above.
Cut four rings or boats of marrow, peel and hollow out the soft inside.
Place on a baking tray and fill with the mixture.
Cook in a medium oven until the marrow is soft.
Sprinkle with your preferred cheese, parmesan or cheddar.
