Ingredients
(Serves 4)
for best flavour try lamb hogget (1year old)
For the basic recipe you will need
Salt, pepper and your favourite herbs
2 tablespoons of flour or corn flour
½ kg diced shoulder of lamb
2 sliced leeks
3 sliced carrots
1 medium chopped sweet pepper
¼ chopped swede
1 pint stock, either your own or made up with stock cube
Optional extras
Courgettes
Cup of red wine
100g bacon
celery
Mushrooms
Dried apricots
Your own favourite extra flavours
Method
Roll the diced meat
in flour & seasoning and fry off gently until brown.
Add stock and all the other ingredients & bring to the boil.
Cook for 2 hours by gently simmering on hob or put it in the oven on a low
heat. Check that mixture isn't boiling dry, add more water (or wine) if
needed.
Serves well with a nice mint jelly |
